What you'll need:
3 sweet potatoes, peeled and quartered
.25 cup olive oil
1 tablespoon butter
1.5 tablespoon fresh lemon juice
1 teaspoon ground nutmeg
Salt and pepper to taste
Step 1: Boil the potatoes for about 15 minutes or until soft. Drain and return to pot.
Step 2: Begin to mash the potatoes. Add olive oil, butter, lemon juice, and nutmeg. Continue to mash until smooth.
Step 3: Salt and pepper to taste. Serve with butter (if desired).
The first thing I thought when I read this is that I bet my preserved lemons would be awesome in this substituted for the lemon juice. But I suppose that would make the dish more Morrocan (and I recently learned, i.e. 20 seconds ago when I looked it up, that Grenada is nowhere near Morroco). I wonder if they have sweet potatoes in Morroco?
