France: Ratatouille Pasta Sauce

A traditional French dish with an Italian twist! This is an easy alternative to your standard pasta dinner.
Ingredients:

1 small sweet onion, diced
3 cloves garlic, minced
Olive oil
1 teaspoon dried or fresh thyme
1 teaspoon dried or fresh rosemary
1 small eggplant, diced
1 yellow or orange bell pepper, diced
1 small zucchini, diced
28 oz. can crushed tomatoes (use a bit more if you prefer a thinner sauce)
Handful fresh basil, torn
Gruyere or mozzarella cheese, grated
Freshly grated black pepper

Step 1: Sauté garlic and onion in large pot or wok, until onions become transparent.
Step 2: Stir in thyme and rosemary.
Step 3: Add diced pepper, zucchini and eggplant and continue to sauté until vegetables are cooked (approximately 10-15 minutes).
Step 4: Add crushed tomato and bring to a boil.
Step 5: Reduce heat, and stir in fresh basil.
Step 6: Simmer for about 10 minutes.
Step 7: Serve over your choice of pasta, topped with cheese and black pepper.
