Iran: Doogh

This is for those of you out there like me that prefer salty beverages to the sugary juices, teas and sodas that are so prevalent at stores. Doogh, popular in the Middle East, uses similar ingredients to the Azerbaijani yogurt soup I made recently. While I thoroughly enjoy the salty, creamy consistency, I understand that Doogh may not be for everyone's palette!
What you'll need:
1 cup plain yogurt (I prefer to use Low-Fat)
1 cup water
1 tablespoon finely diced cucumber
1 teaspoon dried mint
Salt to taste

Step 1: Combine yogurt and water in a bowl and whisk until smooth.
Step 2: Add a couple pinches of salt, and continue to whisk.
Step 3: Stir in diced cucumber and half the dried mint.
Step 4: Transfer to glasses and garnish with the rest of the dried mint. Add more salt to taste if desired.

Side notes: This recipe serves 2, but it's easy to multiply or cut as needed.  For extra refreshment on hot days, serve your Doogh over ice!
