Ingredients:
Oil for deep frying (I used canola)
2 potatoes, peeled and cut into small cubes
1 small onion, finely chopped
2 cloves garlic, minced
1 bay leaf (if you don't have it on hand, you can leave it out)
1 lb. ground pork
5 tbsp. soy sauce
3 tbsp. sugar
1 tbsp. Worcestershire sauce
Dash of pepper
Dash of cumin (optional)
Salt to taste
Step 1: In a large pan or wok, deep fry potatoes in the oil.
Step 2: Remove potatoes from pan and set aside, leaving a bit of oil in the pan.
Step 3: Add onion, garlic and bay leaf to pan and sauté until onions are translucent, about 5 minutes.
Step 4: Add ground pork and a bit of salt, and cook until pork is broken apart in small pieces and cooked through.
Step 5: Add soy sauce, sugar, Worcestershire sauce, pepper, and cumin while stirring.
Step 6: Turn off heat and stir in the deep fried potatoes.
Absolutely delicious!
Variations: Skip the potatoes and serve over rice! Also, I've heard Minchi referred to as the Macanese Sloppy Joe, so serving on buns could be quite good as well. Keep in mind that the amounts of spices and sauces I list are approximate; you can always add more or less, depending what you like. The first time I made this dish I used oyster sauce in addition to the soy sauce, which gave it an awesome flavor too. Or spice it up by adding a dash of cayenne pepper or Sriracha... it's all up to you!
