The website I discovered this meaty Danish recipe on (www.danishnet.com) affectionately nicknames it "Monkey Brains". Don't be deterred by the somewhat gross name or sloppy appearance. This is a great, hearty comfort food for a cold winter night.
Ingredients:
1 large onion, sliced
1/2 lb. ground beef
1/3 lb. bacon, cut into squares
1/3 lb. sausage links, sliced
8 oz. light cream
8 oz. can peeled tomatoes, undrained, coarsely chopped
Salt and pepper to taste
Cooked rice or pasta for serving.
Step 1: Fry bacon in pan until crispy. Remove from pan and set aside, leaving bacon fat in the pan.
Step 2: Add onion to pan and sauté until slightly transparent.
Step 3: Add ground beef and sausage.
Step 4: Stir in cream and tomatoes.
Step 5: Bring to a boil.
Step 6: Reduce heat, cover, and simmer for 20 minutes.
Step 7: Break up the bacon into bite size pieces. Add to mixture.
Serve over rice or pasta. Add salt and pepper as desired.
Tip: If you don't have bacon or sausage, leave it out! While they do add to the overall flavor, the dish can hold it's own without them. It is quite a lot of meat.
