Ghana: Kele Wele

Think of Kele Wele as delicious West African French Fries (I hate to admit that I actually ate mine with ketchup!)
What you'll need:
1-2 ripe plantains
1/4 tsp. ground cayenne pepper
1/4 tsp. ground ginger
1/2 tsp. salt
1 tbsp. water
Vegetable or other oil for frying

Step 1: Peel plantains and cut into 1/2 inch cubes (I made mine a bit big).
Step 2: Combine cayenne pepper, ginger, salt and water in a bowl.
Step 3: Add the plantain cubes to the mixture and toss.
Step 4: Meanwhile, heat oil in a deep pan.
Step 5: Fry plantains for about 3 minutes, or until golden brown all over.
Step 6: Remove plantains from the oil and place on paper towel to remove the excess oil.

Yum!

Side Note: When ripe, your plantains should be a nice mixture of brown and yellow color. Unlike a banana, they do not ripen quickly on your shelf... I bought my green plantains weeks ago!
