Thanks to Food Network Magazine for this variation on a classic layered nacho dip, using Greek ingredients. I served it at a dinner party Sunday, and it was a big hit! It's like a gyro on a chip. What more can you ask for?
Ingredients:
16 oz. hummus
1 lb. ground lamb
1.5 cup tzatziki
1 cup shredded iceberg lettuce
2 tsp. garlic powder
1 tsp. oregano
1 tsp. salt
1-2 tomatoes, diced
.5 red onion, diced
.5 cup kalamata olives, chopped
4 oz. feta cheese
Step 2: Layer your ingredients in a large shallow dish in this order: hummus, lamb, tzatziki, lettuce, tomato, onion, feta, olives.
Step 3: Serve with pita chips at room temperature.
Side note: You can make your own pita chips very easily.. Buy pita bread and cut into eighths. Brush with olive oil (and sprinkle with seasoning if desired). Cook at 375 degrees for about 10 minutes, or until crispy.
If you have leftovers, I recommend using them as salad topping with a few broken up pita chips. It's like a Greek taco salad!
Everyone should make this, regardless of the salt content because it is ridiculously good.
