I've been to England twice, and I can vouch that its bland-food reputation isn't completely unfounded. No offense intended, but, based on the blog I keep, you should know that I crave food with flavor and variety. My sister, mom, and I were getting our fill of Beatles' sight-seeing in Liverpool (drinking at the Phil, where John Lennon used to drink!), when we wandered across the street to this restaurant that was basically a basement cafeteria. All the food is in front of you, and you point at what you want. I saw baked potatoes filled with strange things. I heard them called jacket potatoes. I picked the one with tuna. I sat down with my tray and took a bite. I was thoroughly impressed. Tuna in a baked potato? Well done, Brits, well done.
Ingredients:
1 large baking potato
1/2 6 oz. can of tuna, drained
1/2 green onion, chopped
.5 tablespoon mayonnaise
1.5 tablespoon sour cream
Salt and pepper to taste
Step 1: Bake your potato. You can do this for about 50 minutes at 400 degrees in the oven, or 6 minutes on high in the microwave. Be sure to pierce with a fork first.
Step 2: Mix tuna, sour cream, mayonnaise and green onion together in a bowl, breaking up the chunks of tuna with a fork.
Step 3: Slit your potato down the middle and stuff with the tuna mixture. Salt and pepper as desired.
It's as easy as that!
