Seychelles: Daube de Banane

I'll just come out and say it: I'm not a big sweet-eater. An extra slice of pizza always sounds more appetizing to me than a slice of cake. I'll choose the ham n cheese croissant over the chocolate one every time.  However, for all my blog readers (assuming there are some), I decided to make a dessert. As I'm learning currently, it can also double as a breakfast. Without further ado, Daube de Banane!
What you'll need:
2-3 very ripe plantains (so ripe they're nearly black)
1 tsp. cinnamon 
1 tsp. nutmeg
1 tsp. salt
3 tbsp. sugar (white or brown, your choice)
2 cups coconut milk
1 tsp. vanilla extract

Step 1: Peel plantains and cut lengthwise. Cut again in half.
Step 2: Place plantain pieces cut side up in a large saucepan.
Step 3: Sprinkle with cinnamon, nutmeg, salt and sugar.
Step 4: Cover with coconut milk and vanilla extract.
Step 5: Bring to a boil. Continue to boil for 10 minutes, flipping plantains after 5. (A lot of the coconut milk should boil away)
Step 6: Reduce heat to a simmer and cover. Continue to cook for 20 minutes.
Step 7: Flip plantain pieces back over and serve! If there is any remaining sauce in the pan, you can drizzle over the tops.
