Cuba: Sopa de Ajo

This soup is surprisingly quick and easy to make, and it's full of garlicky goodness. It's kind of like French onion soup, without the onion. And the French. And the baking.
Serves 4

Ingredients:
4 cups chicken broth
3 tablespoons olive oil
4-5 cloves garlic
4 thick slices bread, cut into cubes and toasted
4 eggs
White cheese for topping
Salt to taste

Step 1: Sauté garlic in olive oil until golden.
Step 2: Meanwhile, bring chicken broth to a boil.
Step 3: Separate the bread cubes into 4 bowls.
Step 4: Pour garlic and oil over the bread.
Step 5: Crack an egg into each bowl.
Step 6: Pour boiling broth over each bowl. Let sit for 3 minutes for the egg to cook.
Step 7: Top with cheese, and salt if needed.
