Slow cooked meat is amazing. Tender, flavorful.. and most importantly, easy. Don't ask me why it's taken this long, but this is the first time I've pulled out my crock-pot since moving to Seattle (6 months ago!) I found the inspiration for this in Food Network Magazine. I turned it on before I went to bed last night, and woke up to the entire house smelling of deliciousness.
Serves 3
Ingredients:
Approximately 1 lb. beef flank steak
15 oz. can crushed tomatoes
3 tbsp. ketchup
3 tbsp. water
2 cloves garlic, minced
1 jalapeno, finely chopped
1 small onion, thinly sliced
1 large bell pepper, thinly sliced
1 tbsp. apple cider vinegar
1.5 tsp. cumin
1 tsp. salt
1/3 cup green olives, chopped
Step 1: Mix together all ingredient except olives in a crock pot. Stir to cover meat.
Step 2: Cover and cook on low for 8 hours.
Step 3: Stir in olives and serve over white rice!
