Guest Chef: Vietnam: Banh Cuon

My friend David stopped by my apartment tonight to cook my roommates and me a delicious, summery, Vietnamese dinner.
Did I mention I have amazing friends? (I think I have).
You start with cooked flat rice noodles. Top with chopped mint, cilantro, cucumber, bean sprouts, Vietnamese pork patty, chile paste mixed with fish sauce, and dried shallots. Serve cold.
All of these ingredients were purchased at Viet Wah in Seattle. If you don't have a Vietnamese grocery in your town, substitute with whatever ingredients you can find. This seems like a very adaptable dish. Perfect for a hot summer night (or in the case of Seattle in June, a slightly warm prolonged spring night)
